Tokyo's Nihonbashi is the birthplace of NINBEN. We want to pass down "katsuobushi (dried bonito)," that is a source of pride of Japan, to future generations 350 and 400 years into the future and allow people from around the world to experience the good taste of dashi (soup stock). There is the NIHONBASHI KEZURIBA that serves freshly shaved dried bonito flakes and the standing bar NIHONBASHI DASHI BAR, which is based on the concept of "one soup, one side dish." Be sure to drop by.
